   Anchovy Fillets in Olive Oil


 
Leaving the cold winter behind us, the first days of spring favour the arrival of anchovies which, seeking food and more temperate water, reach the Asturian coast from the Atlantic.
The Cantabrian anchovy is famous for its quality, matured in our cellars for 6 to 8 months before going on to the expert hands of our workers who arrange their presentation in fillets.
